MOZZARELLA STICKS

STEP 1:
Brush the bottom of an empty pan with oil

STEP 2:
Place 6 mozzarella sticks on the pan

STEP 3:
Brush the top of the mozzarella sticks with oil

STEP 4:
Place Three Mozzarella sticks on opposite sides of the dipping sauce, place one mozzarella stick across on top the mozzarella sticks. Place the other two on each side of the three pieces

Place Three Mozzarella sticks on opposite sides of the dipping sauce, place one mozzarella stick across on top the mozzarella sticks. Place the other two on each side of the three pieces

STEP 6:
Sprinkle parmesan cheese over the mozzarella sticks and Garnish with chopped basil

MEATBALL DISH

STEP 1:
Place three meatballs in the middle of square plate

STEP 2:
Place a 2 oz scoop of ricotta cheese in the center of meatballs

STEP 2, continued

STEP 3:
Heat one piece of Texas Toast in the Turbo Chef oven, cut in half on an angle and place one piece of toast on opposite sides of the meatballs

STEP 4:
Garnish with parmesan cheese and basil.  Be sure that the plate rim is clean. Ready to Serve

MEATBALLS PREPARATION

STEP 1:
Place 21 meatballs into half tray hotel pan

STEP 2:
Add 24 oz sauce from meatballs to half tray hotel pan

STEP 4:
Fill a 2oz portion spoon with a level scoop of sliced red onions.

STEP 3:
Add 8 oz of water to meatballs and sauce in hotel pan and mix together with spoon

STEP 4:
Cover the tray with aluminum foil and place the cover on top

STEP 5:
Run the tray twice through Edge Ovens (Pizza Ovens) using the same settings for cooking pizza

STEP 6:
Pour sauce and meatballs into a 1.5 gallon cylinder

STEP 7:
Place cylinder full of meatballs in the steam tray

STEP 8:
Steam tray should be adjusted accordingly to keep the internal temperature of the meatballs at approximately 170 Degrees Fahrenheit for optimal serving temperature

PHILLY CHEESESTEAK

STEP 1:
Brush oil on pizza pan

STEP 2:
Place Rolls inside the pan on oil

STEP 3:
Brush the top of rolls lightly with oil

STEP 4:
Place in the Turbo Chef and cook for 3:45 (Three Minutes and Forty Five seconds)

STEP 5:
Place on a cutting board and cut the rolls in half on a 45 degree Angle

STEP 5, continue

STEP 6:
Take dipping sauce and place in one corner of the plate.

STEP 7:
Place the dipping sauce on one corner of the plate

STEP 8:
Place 2 half rolls on one corner of the plate with the cut side facing the middle of the plate

STEP 9:
Place 2 half rolls on opposite corner of plate with the cut side facing the middle of plate

STEP 10:
Place 2 half rolls in the middle of the four rolls facing the opposite direction of each other

TOMATO GARNISH

STEP 1
Cut two pints of Grape Tomatoes into quarters.

STEP 2:
Place two pints of quartered, 4 oz of roasted peppers, 2 oz of chopped onion, 2 oz of Sysco italian dressing into bowl and mix all ingredients together

STEP 3:
After mixing, put garnish into a container, store and ready for use

BURRATA

STEP 1:
Use the square plate.

STEP 2:
Using 2 oz measuring spoon. Pour 2oz of hot oil vinaigrette in center of plate.

STEP 3:
Take one 4 oz Burrata Ball out of water and slightly dry with a paper towel

STEP 4:
Place in the middle of the plate on top of the Dressing.

STEP 5:
Using 2 oz measuring spoon. Place 2 oz of tomato garnish on one side of the burrata.

STEP 6:
Using 2 oz measuring spoon. Place a second 2 oz portion of tomato garnish on the opposite side of burrata.

STEP 7:
Using the Balsamic Glazed bottle drizzle on the Tomato Salad and the Burrata (as shown in the picture).

STEP 8:
Toast one slice of the Texas Garlic Toast in the Turbo Chef for approx 2 min. and cut in Half.

STEP 9:
Place each half of the bread on both side of the Burrata las shown in the picture)

STEP 10:
Sprinkle some chopped Basil on top the Burrata and the Tomato a salad.

HOT OIL VINAIGRETTE

2 CUPS BALSAMIC VINEGAR

6 CUPS RIKOS HOT OIL

2 CUPS ITALIAN DRESSING (SYSCO)

4 OZ. BROWN MUSTARD

6 OZ. HONEY

2TSP. BLACK PEPPER

3 TSP SALT

3 TSP. GRANULATED GARLIC

STEP 1:
Place al the ingredients in a Bowl and with Hand Held Blender, blend until emulsified (1 to 2 minutes)

STEP 2:
Cover and storage in refrigerator ready ot use
